Riesling Sekt brut nature

Ingredients

• 300 gFresh salmon (sushi grade)
• 1 pieceOrganic lime
• 0,5 bunchFresh cilantro
• 1 pieceShallot
• 1 tbspExtra virgin olive oil
• 1 tspFleur de sel
• 1 pinchWhite pepper
• 5 gFresh ginger

Preparation

1. 1Briefly rinse the fresh salmon under cold water, pat thoroughly dry, and cut into uniform, small 0.5 cm cubes using a very sharp knife.
2. 2Peel the shallot and dice it extremely finely; peel the ginger and grate it directly into a bowl using a fine grater.
3. 3Wash the cilantro, shake it dry, pluck the leaves from the stems, and finely chop the leaves.
4. 4Wash the lime in hot water, finely zest the peel, and juice one half of the lime.
5. 5In a chilled bowl, gently combine the salmon cubes with the shallots, ginger, cilantro, and olive oil.
6. 6Season the mixture to taste with the lime juice, lime zest, fleur de sel, and a pinch of white pepper.
7. 7Arrange the tartare on small plates using a serving ring and serve immediately for optimal freshness.
