Ingredients

• 800 gWatermelon
• 200 gFeta
• 1 bunchFresh mint
• 1 pieceRed onion
• 2 tbspLime juice
• 3 tbspExtra virgin olive oil
• 1 pinchBlack pepper

Preparation

1. 1Peel the watermelon, remove the seeds, and cut into bite-sized cubes of about 2 cm.
2. 2Carefully drain the feta and either cut into small cubes or crumble coarsely with your fingers.
3. 3Peel the red onion, halve it, and cut into extremely fine, almost transparent strips.
4. 4Rinse the mint under cold water, shake dry, pluck the leaves, and cut them into fine strips.
5. 5In a small bowl, whisk together the lime juice, olive oil, and a pinch of pepper to create a dressing.
6. 6Gently toss the watermelon cubes, onion strips, and mint together in a large bowl.
7. 7Distribute the feta over the top, drizzle the dressing evenly over the salad, and serve chilled immediately.
